We will prepare traditional tajarin, ravioli del plin, and the typical pici senesi, following authentic regional recipes. You will learn to make two distinct doughs: one with eggs for the Piedmontese pasta and one without eggs for the pici. Each preparation will be enriched by learning specific techniques, such as the delicate “plin” for the ravioli and the handmade method for the pici. The course will conclude with a seasonal dessert, completing the culinary experience with a sweet touch that reflects local tradition.
